Chicken Recipes

 

Healthy Chicken Bake:
1 whole chicken
potatoes (as many as you want)
carrots (as many as you want)
celery (cut up into pieces)
onion (diced or cut into chunks)
cream of mushroom soup
cream of chicken soup
 
Directions: 
Place chicken in baking bag along with the vegetables and soups. Bake at 375 degrees for about 1 hour to 2 hours, or until chicken is done. My mom makes a meal like this and it is so good and a healthy family meal.
 
 
 

Healty Chicken Parmigiana:

4 boneless, skinless breasts of chicken

Lg. bottle of 'lite' or no fat Italian dressing

1 med. pkg. of bread crumbs with seasonings

3/4 to 1 lb. Provolone cheese

48 oz. jar spaghetti sauce (whatever brand you prefer)

1 lg. pkg. shredded Mozzarella (lite can be used)

 

Directions:

Cut chicken breasts in half and place in Pyrex baking dish. Pour Italian "lite" dressing over chicken pieces to cover completely. Cover and marinate overnight. When ready to prepare, coat chicken pieces with bread crumbs and place in baking dish that has been lined with a thin layer of sauce. Bake at 350 degrees for about 10 to 15 minutes to partially brown the chicken. Remove from oven and cover chicken with: A layer of sauce, a layer of Provolone, and another thin layer of sauce. Cover with foil and bake in oven for 40 to 45 minutes. Uncover and spread with shredded cheese. Leave in oven until the cheese has just melted. Remove from oven and let sit for 15 to 20 minutes before serving.
